This is an easy, no-stress pie to make for the holidays. The recipe, made by my friend, Karen Ranzi, comes from her book, Creating Healthy Children: Through Attachment Parenting and Raw Foods.

Banana slices
One pint fresh organic blueberries
7-10 soaked dates
Dried shredded coconut
Line a 9″ pie plate with banana slices. Blend blueberries with soaked dates and pour the mixture over the sliced bananas. Decorate the top with sprinkles of dried shredded coconut. Chill for two hours in the refrigerator until it jells from the natural pectin in the blueberries – a big success at family get-togethers and raw food potluck celebrations.
